6 large white potato
1/2 cup of Mayonnaise
1/4 cup small diced celery (about 2-3 stalks into 1/4 inch pieces)
3 Tablespoons yellow mustard
1/2 teaspoon kosher salt
1/2 teaspoon pepper
1 Tablespoon fresh minced garlic
1/4 cup dill relish (you can use sweet relish if you prefer)
- Wash the potatoes and place inside a clean plastic grocery sack. Tie the sack closed. Place in microwave and cook for three 3 minutes intervals. Checking potatoes tenderness between. After they have cooked for about 9 minutes total remove the entire bag. (carefully it will be hot.)
- Place the bag on an empty shelf in your freezer. (you don't want it to thaw your other frozen goods.) After 5 minutes tear open the bag. Return the open bag to the freezer laying all potatoes flat. Continue to cool in the freezer for about 20-30 more minutes. (when they are no longer overly warm when touched)
- While the potatoes cool in a small mixing bowl mix together all the other ingredients until well blended.
- Next take the potatoes out of the freezer. The skins should easily peel. Peel the potatoes and cut them in a large dice (about 1 inch) into a large mixing bowl. (make sure you will have enough room to toss the potatoes.
- Once all the potatoes are cut add the dressing mixture on top of the potatoes. Gently toss the potatoes until they are well coated.
- Refrigerate for at least 30 minutes. (the longer it "rests" in the refrigerator the more the flavors will integrate.
You can add hard boiled eggs into the mixture as well, but I prefer the pure potato salad. Don't be afraid to change the recipe to add seasoning or ingredients to your family's personal tastes. One of the best parts about cooking is creating a delicious dish that you altered from an existing recipe to your personal preferences. Add chives, bacon crumbles, green onion, parsley or any other favorite ingredient to make this dish your own. I have made many different variations of this recipe.
